  • 6 slices bacon, diced
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth (try to use lower sodium chicken broth whenever possible)
  • 3 cups (14 ounces) red potatoes (3 to 4 medium sized potatoes) cut into 1/2 inch cubes
  • 3 cups corn kernels, rinsed and drained (fresh, frozen, or canned)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 bay leaf
  • 1 cup half and half
  • 1 tablespoon corn starch
  • 1 cup shredded cheddar cheese
  • Sliced green onions, for garnish
  • Chopped fresh parsley, for garnish
  • Crumbled bacon, optional, for garnish

  11. In a mixing bowl, whisk together half-and-half & cornstarch.
